About

As one of the most well-known Taiwanese tea, Dong Ding Oolong could only be produced by experienced tea masters. The processing of this tea is probably the most complicated of all. From withering to stirring, oxidizing, rolling, repeatedly mass breaking, drying and mass-rolling, to the delicate roasting process, it takes almost 20 steps to perfecting Dong Ding Oolong. 

 

The name Dong Ding derives from a mountain name in Nantou, Taiwan. It was said that the region was the place of origin of Dong Ding Oolong Tea. The Dong Ding Mountain is 700 meters of elevation, the rainy region causes wet mountain roads. Back in the days the farmers had no shoes to wear and had to “freeze” their toes (in Taiwanese dialect “dong ding”) to climb the mountain. The tea produced in the area thus came the name Dong Ding Oolong.

 

Good to know…

Dong Ding Oolong is heavily roasted. The high temperature roasting process brings out rice cracker and charcoal aroma. It not only creates more flavor, at the same time lowers the moisture content of tea leaves, allowing ease of storage.

Moreover, during the roasting process, the caffeine in the tea was hugely removed. Making Dong Ding Oolong a suitable tea for those who are afraid of sleeping issue and those with sensitive stomach.
